


2021 Seven Pillars Syrah, Jess' Block

Growing season notes:
The 2021 growing season was, dare we say, perfect. A drier winter forced the roots to dig deeper for water, thereby concentrating their flavor and an early bud break was followed by consistently sunny days, resulting in even ripening across the vineyard. Our fruit was handpicked on October 3.
Winemaking notes:
Our 2021 Syrah went through 30% whole-cluster fermentation. We continued to use the classic French pigeage a pied (foot-tread) method to submerge the must into the wine during primary fermentation of the whole cluster berries. The juice was barreled down to predominantly once-filled French barrels. It was aged for 20 months in barrel and laid down for another 25 months to mature. 135 cases produced.
Tasting notes:
An elegantly structured wine with a somewhat deceptive dark garnet color. Brighter fruit on the nose transitions to coastal blackberry, the hallmark (albeit less intense) white pepper, and toasted praline notes on the palate. A voluptuous, round mouthfeel with bright acidity that keeps everything balanced and will ensure ageability for this exceptional vintage.
