Growing season notes:
The 2015 growing season received well below normal rainfall, causing the vines to struggle quite a bit, resulting in smaller clusters full of flavor. The temperatures were ideal throughout the season though and allowed the fruit to ripen perfectly until our harvest on September 15 at 25.6 Brix resulting in an alcohol level of 14.4%.
Winemaking notes:
We hand-sorted the berries and fermented in a stainless-steel tank. After primary fermentation, it was barreled down to 50% new French oak barrels and 50% two-year-old French oak barrels to complete malolactic fermentation. It was aged for 33 months in barrel before bottling. 60 cases produced.
Tasting notes:
The most “Napa like” of our Cabernets to date, the 2015 showcases dark, brooding fruit, and cedar, tobacco and leather notes. For those of you who appreciate aged Cabernets, this one drinks as if it has been cellared for 20 years. A perfect fireside wine, we recommend drinking this one now.
