2015 Seven Pillars Syrah, Jess' Block

Vintage notes:

The 2015 growing season received well below normal rainfalls. Our move to deficit irrigation and no- spray farming led to a smaller but extremely flavorful harvest. The temperatures were ideal throughout the season though and allowed the fruit to ripen perfectly until our harvest on September 20.

Winemaking notes:

For the 2015 Syrah, 50% of the fruit was hand sorted and de-stemmed, then combined with the remaining whole clusters to ferment  in a stainless steel, open top fermenter. We used the classic French pigeage a pied (foot-tread) treatment to extract color and to submerge the must into the wine during primary fermentation of the whole cluster berries.  Native yeasts initiated both the primary and malolactic fermentations.  Post primary fermentation, the juice was barreled down to ~40% new Hungarian barrels, contributing some roundness and spiciness through malolactic fermentation. It was aged for 14 months in barrel.

Tasting notes:

Hints of tobacco and coffee on the nose, lovely first impressions of black cherry and currant with detectable white pepper. The finish is savory in nature, think umami as present in a mushroom broth.
